For me, simplicity wins! Because there's nothing quite like a simple, classic tomato soup. Italian flavors that warm the heart and stomach.
This is the easiest soup to prepare and the result is nothing short of perfect!
So, if you love Italian food, this is the soup for you!
A recipe for the most delicious tomato soup with rice!
Ingredients:
2 tablespoons of olive oil
1 small onion, finely chopped
5-6 cloves of sliced garlic
1 can of finely sliced tomatoes (or 4 fresh tomatoes, peeled and diced)
2 heaping tablespoons of tomato paste
A tablespoon of sun-dried tomato spread (optional)
A little finely chopped fresh basil and thyme
A cup of rice (any type of rice is fine – short-grain rice is best)
2 liters of water
A tablespoon of silan (date honey) (optional – according to taste)
Add salt generously / black pepper
Option :
Fresh basil
Grated Parmesan
Preparation:
Heat a saucepan with oil and cook the onion with the garlic until golden.
Add the herbs, tomato paste and can of crushed tomatoes.
Mix and add the water. Bring to a boil and add the rice.
Season, balance with silan and cook for about 15 minutes or until the rice softens.
Cook the soup for about half an hour over medium heat until it becomes thick and creamy.
Add the coriander and serve hot.
Notes and replacements:
You can use grated fresh tomatoes (4-5 tomatoes – preferably peeled)
Any type of rice is allowed, even brown rice or oatmeal.
You can add a little fresh hot chili for spice.
Instead of silane, you can use ordinary white sugar, honey, or maple syrup.
