Pancakes with 1000 holes.
Ingredients :
250g of extra fine semolina
150g of flour
5g of dry yeast
1 tsp of sugar
1 tsp of salt
650ml of lukewarm water
2 sachets of baking powder (14g)
Preparation :
Place all the ingredients (except the baking powder!) in a mixing bowl and add the water. Stir with a small whisk by hand and then blend with an immersion blender (for soup) or a mixer for 4 minutes until small bubbles form. The batter should be smooth and thicker than pancake batter. Add the 14g of baking powder and blend for just one more minute. Strain the batter to remove any lumps.
Heat a pan and pour in a ladleful of batter (like for pancakes). The ladle will spread the batter on its own, automatically creating holes. Rinse your pan under cold water between each batch of 1000-hole pancakes. These pancakes only cook on one side; let them cool slightly on a clean tea towel, but not stacked on top of each other, as they will stick together! The batter can be kept overnight in the refrigerator.
