Here's a dream Swiss brioche if you're seduced by the look, but the taste... you'll go crazy!
It's delicious, I recommend it a thousand times over!!!! 🤗
Ingredients :
300g of flour
50g of sugar
150g of milk
1 egg
50g of unsalted butter
7g of dried yeast (or 15g of fresh yeast)
3g of salt
Preparation :
First, I prepare my sourdough starter with yeast, sugar and milk. I let it sit until it has risen well.
Meanwhile, I sift the flour into the bowl of a stand mixer. I add the salt and stir. I make a well in the center and add the egg and the sourdough starter, which should have foamed up nicely. I beat until I get a smooth dough. Then I add the butter all at once, in small pieces, and wait at least 10 minutes for it to be fully incorporated. The dough should be elastic.
I film it in contact with the film and leave it to set for 2 hours in the refrigerator (or overnight!).
Take it out of the fridge, degas it, then spread it out very well to a maximum width of 0.5 on your work surface.
Ingredients for the cream:
500 ml of Shamenet 32% Gentle Cream
1 egg
150 grams of sugar
1 sachet of vanilla sugar
80 grams of flour
Cream preparation
Put the egg, sugar, and vanilla sugar in a saucepan and whisk lightly with a whisk.
Add the flour and mix.
When the mixture is smooth, gradually add the soft cream, stirring until the cream is absorbed into the mixture.
Place the saucepan over medium heat and begin stirring continuously until the cream crystallizes, about fifteen minutes.
Transfer the cream to a glass bowl and cover with cling film to prevent a skin from forming.
Cool to room temperature.
Spread the pastry cream on top. Fold it in thirds like a letter, then spread it out a little more and cut strips. Roll up each brioche and place them in a mold, but don't let them touch each other as they will expand, so space them at least two centimeters apart!
Leave on for 45 minutes.
Brush with an egg wash (1 egg + 1 teaspoon of milk). I sprinkled it with sugar pearls!
Bake for 25/30 minutes at 180 degrees.
