Hey, here's an idea for small brioche croissants with chocolate, very nice for afternoon snacks!
Brioche dough:
•500g of flour
• 1.5 tablespoons of dry yeast or 1/2 cube of yeast
•80g of sugar
•1/2 teaspoon of salt
•15 cl of milk or water
•3/4 glass of oil
•2 eggs
For the chocolate cream:
•180g of 70% dark chocolate cocoa
•120g of butter/margarine
•45g of cocoa
•80g of icing sugar
Prepare the dough and let it rise until it doubles in volume.
Melt the chocolate and butter in the microwave, then add the cocoa and icing sugar. Shape your croissants.
Let it rise again for half an hour and brush with egg, then bake in a preheated oven at 180 degrees for about 20 minutes.
