For the chicken:

- 675g of skinless, boneless chicken thighs or breasts, or 8 parguit
- Salt
- Pepper
- 2 tablespoons of oil

For the sauce:

- 1/4 cup (60 ml) low-sodium soy sauce
- 3 tablespoons (60g) of honey or sugar
- 1 tablespoon of grated ginger
- 3 crushed garlic cloves
- 2 tablespoons of Mirin – optional
- 2 tablespoons of rice vinegar
- 1 teaspoon of sesame oil (optional)
- 2 tablespoons of water

Preparation :
1. Prepare the sauce: In a small bowl, whisk together the soy sauce, honey/sugar, vinegar, mirin, sesame oil, water, garlic, and ginger. Set aside.
2. Season the chicken with salt and pepper. Heat the oil in a large skillet over medium heat, add the chicken, and cook on one side for 6-7 minutes, until golden brown. Turn over and fry for another 4-5 minutes.
3. Pour in the sauce and simmer until the sauce thickens slightly and the chicken is cooked through, about 3 to 5 minutes.
4. Serve with rice, garnish with green onions.
