These cakes are excellent with morning coffee or hot mint tea! This recipe comes from a friend of my mother's, Mrs. Drahi, whom she met shortly after leaving Algeria for France, which was far too dangerous for Jews during the Islamist attacks. The recipe was this (in my mother's handwriting):

Ingredients :
A zest of lemon
1 kg of flour
250g of margarine
3/4 of a glass of oil
2 packets of baking powder
150g of sugar
Preparation :
Mix the flour and margarine until the dough resembles coarse sand, then add the oil, continuing to knead from the mixer and add the baking powder, lemon zest, sugar and add a little warm water if the dough is not pliable.
Roll out your floured dough, brush with beaten egg yolk, sprinkle with a little granulated sugar, and cut into diamond shapes.
Bake in the oven at 190°C for 10 to 15 minutes using fan-assisted cooking.
