My mother, of blessed memory, learned this recipe from her friend, Mrs. Cohen. She always told me, "Learn this recipe; the cigars are delicious." Unfortunately, I never got around to it because we think life lasts forever… but my father taught me how to make them this year in honor of Purim, and I can tell you, they are simply excellent!
Ingredients :
1 glass of oil (disposable plastic cup)
1 glass of water
1 tiny pinch of salt
2 tablespoons of white vinegar
1 small pinch of sugar
1 pinch of Alsatian yeast
Flour needed
Ingredients for the almond filling:
1 cup of almond flour
1/3 cup of sugar
Orange blossom needed
Preparation :
Beat all the ingredients together until the mixture is white and smooth, like a thin cream. Then add enough flour to obtain a light, pliable dough that is not too soft.
Prepare 250g balls of dough. Roll each ball into a log, then cut into pieces the size of a ping-pong ball. Flatten each small ball with a little oil in your hands and add half a teaspoon of filling. Roll up the cigar shape, gently folding in the corners.
Fry and coat with honey.
