Here's a great idea for a change from chicken for lunch: try a fried filo pastry filled with chicken and vegetables. Serve it with a light side dish like avocado salad and coleslaw.
Ingredients:
Boiled or raw chicken breast (cut into small strips)
1 medium grated carrot
Grated medium cabbage
3 tablespoons of soy sauce
½ tablespoon of salt, according to your taste
½ tablespoon of black pepper
Juice of one lemon
1 medium green bell pepper, cut into strips
Frying oil
8-10 sheets of brick pastry
Instructions:
In a large bowl, mix the chicken with all the vegetables.
Add all the spices and sauces and mix well.

Preparing the roll:
Place a sheet of brick pastry on a plate, fill with the chicken filling in the center of the sheet (about 2 tablespoons of filling), fold the 2 opposite ends inwards and then roll from bottom to top.
Heat the oil in a deep pan while you fry the stuffed cigars until golden brown on each side.
Remove to absorbent paper and serve. Caution – The filling is very hot.
