Bavarian cream for red fruit lovers

A sponge cake, a mousse, and love! Let's go!

Sponge cake recipe: 

4 eggs
125g of flour
125g of sugar
Half a packet of baking powder

Whisk the egg whites until stiff peaks form, adding a pinch of salt. Once the whites are firm, add the sugar. Then wait two minutes, add the egg yolks one at a time, and finally fold in the flour, which has been previously mixed with the baking powder, reducing the speed of the electric mixer.

Grease (or use margarine) your 18cm cake tin and bake in a preheated oven at 180°C for 20 minutes. Once baked, remove from the oven and let cool.

 

 

 Red berry mousse:

  • 500g of red berries
  • 400g of Nutrifil cream (or Halavi liquid cream)
  • 18g of powdered gelatin
  • 150g of sugar

Pour your gelatin into half a glass of water for 15 minutes. Whip your cream. Blend the fruit and strain it.

Place the strained fruit in a small saucepan and add the sugar. Heat gently and add the gelatin, then continue heating without letting it boil! Next, stir in the cream. Divide the cream into three portions.

Cut your sponge cake in half lengthwise, add a first part of the cream, add a second layer of sponge cake (thinner) and the second part of the cream and some whole raspberries if you have some!

Then decorate your cake with the remaining cream!

Leave in the freezer for 15 minutes and then place in the fridge.
