Berkoukes is an Algerian dish. It's a hearty soup containing couscous (similar to large couscous), meat (in this case, chicken breast), and a fragrant broth. It's a very popular dish in winter.
Ingredients (Serves six)
250g of chicken breasts
300g crushed tomatoes
1 shallot
150g potatoes
1 carrot
1 courgette
1 stalk of celery
1 turnip
6 cloves of garlic
1 tsp ground cumin
1 cc ras el hanout
1 tbsp tomato paste
10 g coriander
10 g parsley
1 bowl of lead
3 tbsp olive oil
Preparation :
Peel and chop the shallot, garlic, and celery. Set aside. Peel and dice the potatoes and turnip, set aside.
Pour the olive oil into a casserole dish and heat over medium heat. Add the shallot/garlic/celery mixture along with the chicken cut into strips. Stir and sauté for 2-3 minutes.
Add the cubed potatoes, turnips, and chopped tomatoes. Stir in the spices, tomato paste, and 1 glass of water. Add the zucchini. Cover and simmer over low heat for 30 minutes.
Next, add the lead pellets and continue cooking for 15 to 20 minutes. Adjust the seasoning.
Chop the parsley and coriander together and sprinkle over the dish just before serving.
