Today I am sharing with you my recipe for semolina galette (kessra), this one is thinner and crispier unlike matlou which is thicker and has a much softer and spongier texture.
Ingredients: for 2 pancakes
800g of extra fine semolina
2 teaspoons of salt
60ml of oil
1/2 teaspoon of baker's yeast (optional)
250ml of lukewarm water
Preparation :
Place the dry ingredients first, then add the oil and work it in with your hands like couscous. Finally, add the water and knead to form a smooth dough. Divide the dough into separate balls, flatten them, and shape them into 1 cm thick patties. Cook them on both sides in a pan.
