In a saucepan over low heat, mix:
- an egg,
- 50 g of sugar,
- 15 g of cornstarch e
- 25 cl of milk
Mix until thickened. Remove from heat and add a teaspoon of vanilla extract.
Next, peel two apples into thin slices and sprinkle them with lemon juice to prevent them from browning.
Preparing the cake batter:
In a bowl, mix:
- 2 eggs,
- 100 g of sugar
- a pinch of salt
Mix with an electric mixer until you obtain a light and airy texture.
Pour in 1 teaspoon of vanilla extract and 10 cl of milk, then mix again.

In another container, mix 200g of flour and 13g of baking powder, then sift the mixture and add it to the cake batter.
Place the apple pieces in the cake batter, then gently stir and pour the mixture into a round cake tin lined with parchment paper. Once the cream is in a piping bag, pipe a spiral onto the top of the cake.
Bake in a preheated oven at 180°C (350°F) for 30 minutes. Before unmolding, let it cool, then dust with powdered sugar (optional). Enjoy your butter-free and oil-free apple cake!
