A chopped onion
2 diced tomatoes
Two tablespoons of tomato paste diluted with a little water
1/2 bag of ready-to-use chickpeas
Pieces of beef (neck or lamb)
4 chopped celery stalks
1/2 teaspoon of turmeric
A tablespoon of salt and chicken marakof
A teaspoon of red paprika
Three sliced courgettes
A piece of diced squash
2-3 carrots
Instructions
Chop the onions and fry them in oil until brown.
Added two diced tomatoes and at the same time the tomato paste mixed with water.
Add half a bag of ready-to-use frozen chickpeas.
Added pieces of beef (neck or lamb) after boiling them in water.
After the broth begins to thicken, add water to the level of the pan, let it boil, then add the carrots, pieces of kohlrabi, celery stalks and spices: turmeric, salt, chicken stock and red paprika.
Let it cook for a bit and add the extra vegetables that cook faster: courgettes, pumpkins and celery leaves. Season again to adjust the flavors.
Cook until all the vegetables are soft and remove from the heat.
Serve with couscous grains, and why not, merguez sausages!
