These small fried cakes are a specialty of the Jewish community of Algiers and Batna; here is my mother's recipe (may her memory be a blessing):
Ingredients :
75g of mastsa powder
6 eggs
the juice of an orange
250g of sugar
oil (for frying), salt
Preparation :
In a bowl, beat the eggs by hand, then gradually add the matzo meal. Next, add the orange juice and a pinch of salt. The batter should be smooth!
Meanwhile, prepare your syrup by mixing 1/2 liter of water and 250g of sugar. Cook over medium heat until the syrup has reduced by half.
Fry your cakes using a tablespoon and then soak them in this syrup!
A cup corresponds to 250 ml when I mention "cup" in my recipes. Here are two tables that will help you with your conversions if you don't have a cup!
