Chicken with brown rice
Total time for preparation, cooking and pressing: 29 minutes
For four people:
Ingredients :
4 chicken breasts
One can (400g) of diced, unchopped tomatoes
Three celery stalks, leaves cut into rounds
Two tablespoons of olive oil
Two cloves of chopped garlic
1/2 cup chopped shallots
ground saffron or turmeric
2 cups of whole grain brown rice
2 tablespoons of chopped parsley

Preparation
1. Heat the oil in the pressure cooker on the sauté setting. Cook the chicken for 4 to 6 minutes, then turn it over so it browns on all sides. Remove the chicken from the Ninja.
2. Add the shallots and celery. Cook for 3 minutes. Add the garlic and saffron. Cook for 30 seconds. Stir in the tomatoes. Place the chicken on top of the tomato mixture. Close the pressure cooker lid. Bring to high pressure for 6 minutes. Allow the pressure to release naturally for 5 minutes, then quickly release any remaining pressure.
3. Remove the cooked chicken again, and add the rice, a tablespoon of marakof, and two glasses of water. Cook for 5 minutes under pressure. .
4 – Place the rice on the plates. Serve the chicken with the rice. Sprinkle with parsley.
