Learn how to make the best fudgy chocolate brownie cookies. These cookies are so rich in chocolate flavor, so delicious and moist. And of course, this recipe is very easy to make.
INGREDIENTS
225 g of dark chocolate 60-70%
4 tablespoons (60g) of butter (or margarine)
1/2 cup (100g) of brown sugar
2 eggs
1 teaspoon of vanilla extract
1/4 teaspoon of salt
1/3 cup (40 g) of flour
1/4 teaspoon of baking powder (chemical leavening agent)
1 tablespoon of cocoa powder
1 teaspoon of instant coffee
PREPARATION :
1. Place the chocolate and butter in a heatproof bowl and melt in a saucepan with simmering water or in the microwave. Cool to room temperature.
2. In a large bowl, whisk together the sugar and eggs. Add the melted chocolate and mix well. Sift together the flour, cocoa powder, and baking powder, and mix until smooth.
3. Refrigerate for 20 to 30 minutes. (Optional)
4. Preheat the oven to 175°C. Line 2 cookie sheets or baking trays with baking paper.
5. Drop a tablespoon of dough, spaced 2 to 3 inches apart, onto the prepared baking sheets. Spread the dough lightly into a thin layer if you want to make cookies, or into mounds if you prefer to keep the brownie shape (see photos). .
6. Bake in a preheated oven for 10 minutes. The edges should be cooked through, but the centers should still be slightly soft. The cookies will be soft when they come out of the oven but will harden as they cool. Let them cool for 5 to 10 minutes, then transfer them to a wire rack to cool completely.
