Here is the recipe for batbouts with chicken marinated in curry!
Ingredients for about twenty batbouts:
150ml of lukewarm water
400ml of soy milk
20g of dry yeast
600g of flour
400g of extra fine semolina
1 tablespoon of sugar
1 tablespoon of salt
Pour in the soy milk, flour, semolina, yeast (if using dry yeast, dissolve it in a little warm water first), sugar and salt.
Begin kneading, gradually adding water until the dough is soft and pulls away from the sides of the bowl.
Once the dough is pliable, stop watering.
Knead for 5 to 10 minutes.
Once your dough is pliable, oil your hands and form it into a ball. Place it in a lightly oiled bowl. Let your dough rest for 1 to 1.5 hours.
When the dough has risen well, degas and roll out your dough to a thickness of 0.50cm on a work surface that you have sprinkled with flour or semolina.
Cut out using a cookie cutter or by forming a round galette, then place your batbouts on parchment paper and let them rest for 20 minutes.
Heat a pan and cook over low heat, waiting for them to puff up before turning them over. Turn them over regularly to check they are cooked through.
Ingredients for the filling:
1 kg of chicken breast
Two tablespoons of olive oil
1 tablespoon of paprika
1 tablespoon of curry
1 tablespoon of turmeric
1 tablespoon of ground ginger
Parsley or coriander
Salt/pepper
Salad
Fried onions
Cut your chicken into small cubes, add the spices and a drizzle of oil, sauté for a few minutes, then add the coriander. Once your chicken is cooked, it's ready.
Fill the batbouts and enjoy! 😋
