Ingredients

  • 500g of chuck or shank
  • 500g of lamb
  • 2 large onions
  • 6 cloves of garlic
  • 2 fresh tomatoes
  • 1 kg of spinach
  • 5 turnips
  • ½ cabbage
  • Dried rose spice
  • Salt
  • Pepper
  • Paprika
  • 1 stalk of celery
  • 6 carrots
  • 500g of peas
  • Fresh parsley
  • Fresh coriander
  • Artichokes
  • Beans
  • Broth (quantity as needed)

Preparation steps

  1. Cook the chuck or shank in water, then add the pieces of lamb and let it cook.
  2. Meanwhile, sauté the sliced onions and garlic in a casserole dish or large pot.
  3. Add the chopped fresh tomatoes, then stir in the spinach, fresh parsley, fresh coriander, sliced carrots, chopped turnips, broad beans, peas, finely chopped cabbage, quartered artichokes, chopped celery stalk, dried rose spice, salt, pepper and paprika.
  4. Sauté all the vegetables and spices, then gradually add the meat cooking juices and the pieces of meat.
  5. Gradually pour in the broth until it reaches about 5 cm above the vegetables (maximum), then simmer for 3 hours.
  6. Serve the Msoki on a crushed flatbread.

To intensify the flavors, don't hesitate to taste regularly and adjust the rose spice and paprika seasoning to your liking. This dish benefits from being prepared a day in advance: its aromas develop beautifully after resting overnight.
