Here's a must-have recipe for Passover: Osbane from Msoki, a delicious dish made with stuffed intestines that cooks slowly in the rich broth of the Msoki. Each bite reveals a flavorful blend of spinach, fresh herbs, and meat, enhanced by a subtle aroma of dried rose. Ingredients

  • 1 kg of finely chopped spinach
  • 10 cloves of chopped garlic
  • 1 large chopped onion
  • 1 bunch of chopped dill
  • 1 bunch of chopped fresh coriander
  • 1 bunch of chopped flat-leaf parsley
  • A bowl of cooked rice
  • Harissa
  • 2 tablespoons of oil
  • 2 eggs
  • Salt, pepper, and dried rose
  • 300g of grilled chicken liver, cut into small pieces
  • 500g of minced meat
  • 500g of casings

Preparation steps

  1. In a large container, combine the finely chopped spinach, garlic, onion, dill, fresh coriander, and parsley.
  2. Add the cooked rice, harissa, oil, eggs, grilled and chopped chicken liver, and minced meat.
  3. Add a pinch of salt, pepper and dried rose petals to taste.
  4. Mix all the ingredients together in the container and check the seasoning thoroughly.
  5. Gently stuff the intestines with this generous stuffing.
  6. Let the stuffed casings cook in the Msoki. If you wish, stir some of the remaining stuffing directly into the Msoki broth to enhance the flavors.

Feel free to add extra stuffing directly to the Msoki broth: this will intensify the flavors and make the dish even more delicious. You can also prepare the stuffing in advance and refrigerate it for a few hours before stuffing the casings.
