Ingredients
- 8 pieces of chicken
- 5 eggplants
- 8 large onions
- 200g of raisins
- Cinnamon
- Cloves
- Ginger
- Grated nutmeg
- Salt and pepper
- Oil
- Toasted slivered almonds for decoration
Preparation steps
- Start by preparing the eggplants: slice them, massage them lightly with salt, then bake them in the oven with a drizzle of oil until they are nicely browned.
- Meanwhile, slice the onions and sauté them over low heat in a pot. Let them simmer until all the water evaporates and the onions are golden brown and caramelized.
- In a separate pot, begin assembling the dish: arrange a first layer of chicken pieces, then add half of the browned onions and half of the cooked eggplant. Sprinkle with spices (cinnamon, cloves, ginger, nutmeg, salt, and pepper).
- Add the remaining chicken pieces on top, then garnish with the remaining eggplant, the remaining onions, and finish with the raisins. Season generously once more.
- Pour a glass of water into the pot and simmer over low heat for 1 hour.
- Transfer everything to the oven preheated to 180°C and cook for an additional 20 minutes.
- Remove the Baranya from the oven and sprinkle generously with toasted flaked almonds before serving.
For an even more beautiful presentation, lightly toast your slivered almonds in a pan just before adding them — their warmth will enhance the aromas! You can also prepare this dish the day before: it will only be better the next day, as the flavors will have had time to meld together.
