Caramelized pineapple cake

Here's a cake recipe that has everything it takes to become a staple on your table: few ingredients, incredibly easy preparation, and a result worthy of the finest pastries. The secret? A light caramel expertly poured into the bottom of the pan, topped with a soft batter enriched with a hint of vanilla. Fresh from the oven, this cake elegantly flips over to reveal a beautiful caramelized glaze studded with pineapple. It's simple, it's beautiful, it's delicious—try it!

Ingredients

  • 4 eggs
  • 2 glasses of sugar
  • 1 sachet of baking powder
  • 1 sachet of vanilla pudding
  • 2 glasses of flour
  • 2/3 of a glass of oil
  • 3/4 of a glass of pineapple juice or orange juice
  • 1 tablespoon of liquid vanilla
  • 300g of sugar (for the caramel)
  • Pineapple rings

Preparation steps

  1. Prepare the caramel: heat the 300g of sugar in a saucepan until it reaches a nice light brown color. Immediately pour it into the bottom of a well-oiled (or lightly buttered) mold, then arrange the pineapple rings on top of the caramel. Let it set.
  2. In the bowl of an electric mixer, pour the 4 eggs, the 2 glasses of sugar, the baking powder, the packet of vanilla pudding mix, the 2 glasses of flour, 2/3 of a glass of oil, 3/4 of a glass of pineapple (or orange) juice and the tablespoon of liquid vanilla.
  3. Beat all the ingredients together until you obtain a smooth and homogeneous batter, without lumps.
  4. Carefully pour the batter over the pineapple-caramel mixture in the mold.
  5. Bake at 180°C for 50 minutes, until the cake is golden brown and a knife inserted in the center comes out clean.
  6. Remove the cake from the oven and let it cool for a few minutes—it should remain warm but still pliable. Quickly invert the pan onto a serving plate to unmold the cake and reveal its beautiful caramelized glaze.

For perfect caramel, pay close attention: once it starts to brown, you must act quickly before it burns. If you prefer a more tangy flavor, feel free to replace the pineapple juice with orange juice—the result will be just as delicious!
