The Tunisian salad or "slata" mechouia (grilled salad) is composed of tomatoes, peppers, (chili peppers), garlic that are grilled and chopped after cooking; it is seasoned with salt, pepper, garlic and drizzled with lemon juice and olive oil.
Note: grilled vegetables on a barbecue, charcoal (kanoune in Tunisian), are better.
It is often served with olives, tuna, and hard-boiled eggs. This Tunisian recipe comes from Felix Asher Perez.
INGREDIENTS (4p.)
3 bell peppers (or 2 bell peppers and 2 sweet or hot chili peppers)
9 tomatoes
4 cloves of garlic
Olive oil
Lemon juice, salt, pepper (adjust by tasting)
RECIPE:
Preheat the oven to 250°, then place the vegetables on a baking sheet without peeling them for 30 minutes.
Turn them over and place the garlic cloves inside.
Let it cook again and turn off the oven when the vegetables are tender and the skin has blackened a little.
Place the vegetables in a food bag and seal it to peel them under the effect of steam.
Remove the seeds from the tomatoes and peppers. Peel all the vegetables.
Chop with knives.
Pour the contents into a container
Add olive oil, lemon, salt and pepper, adjusting to taste.
It is common to add tuna on top of slata mechouia and/or hard-boiled eggs.
