Make the dough… put it in the oven and by the time you've finished washing up, the cookies will be ready and filling the house with an intoxicating aroma!!
These butter and coconut cookies are a combination of crunch and softness
The measuring cup is a 7oz disposable cardboard cup
Start by melting 100 grams of butter/margarine with a buttery taste in the microwave.
In a separate bowl, mix:
2 and a half cups of self-raising flour
3/4 cup of sugar
1 vanilla sugar
A glass of coconut water, filled to the brim.
Mix well and add:
2 eggs
Half a glass of orange juice
A little orange zest
And then the butter that we melted.
Mix by hand for a very sticky dough.
Lightly grease your hands and roll into balls the size of a falafel ball.
Place on a baking sheet lined with parchment paper at regular intervals, as the cookies will flatten and spread during baking.
Bake in a preheated oven at 200 degrees for approximately 10-12 minutes or until you achieve the shade you like.
I like those who are tanned.
You can add chocolate chips to the mixture, as in this recipe!
