Ingredients :
The dough:
450g of medium semolina
130g of softened butter
2 tbsp of oil
100ml of water + 4 tbsp of orange blossom water
The farce:
250g of date paste
1 teaspoon of orange blossom water
A pinch of cinnamon
1 teaspoon of softened butter
Frying oil
Honey
Preparation :
Mix the medium semolina and the soft butter (room temperature) (or margarine) and the oil and work the dough like couscous grains and let the dough rest for 30 minutes.
Meanwhile, prepare the filling with date paste, margarine, orange blossom and a little cinnamon, then take a ball of dough and form it into a thin sausage (use a piping bag if you can't roll it), and do the same with the rest of the filling, and cover them with cling film.
For the dough, gradually add water and orange blossom water until you have a firm dough that doesn't crumble and forms a thick log. Make a well down the center lengthwise with your index finger and place the date filling log inside. Close the well and reshape it. Cut diagonally with a knife and fry in oil over medium heat (not too hot, not too low). .
Dip them in warm honey that has been heated and let them cool on a wire rack.
