The Papouchado of Passover
Ingredients :
1 glass of almond powder
1 glass of sugar
1 glass of oil
2 eggs
2/3 cups of special cake-grade matzo meal (the very fine kind)
Two bars of dark chocolate
Preparation :
Beat the eggs and sugar, then add the oil until the mixture is pale and creamy.
Next, add the almond flour and mix well.
Add the matzo meal little by little.
Form a nice ball
Roll out the dough to 0.4 mm and shape your papouchado.
Bake at 180°C max for 8-9 minutes
Melt the chocolate in a double boiler.
Dip one side only in the melted chocolate, placing them on a wire rack.
