Ragoût de poulet et poivrons rouges épicés

Spicy chicken and red pepper stew

This dish contains no water. All the liquid comes from the peppers and chicken. It simmers for hours on low heat, and in the end, you get a stew with perfect flavors, so be patient, because it's worth it. Prepare it for Friday, and buy at least one loaf of bread for everyone.

Ingredients

  • 2 kg of sweet red peppers
  • 8-10 pieces of fresh chicken, depending on your preference
  • 2 spicy red chili peppers
  • 6 dried Sudanese peppers
  • 10 cloves of garlic, peeled
  • 1/2 cup olive oil
  • 1.5 tablespoons of Atlantic sea salt
  • 1 teaspoon of ground black pepper
  • 1 tablespoon of paprika (hot or sweet according to your taste – I use hot)
  • 1 teaspoon of turmeric

Preparation
Wash and deseed the bell peppers, then cut them into wide strips. In a large saucepan, heat half the olive oil. Add the chicken pieces one at a time and brown them well on all sides so they release their flavors into the oil. Remove them from the pan and add all the bell peppers and the garlic.

Cover the pot and cook the peppers for about an hour or more, until they have reduced in size and softened. In a small bowl, mix the remaining olive oil with the spices and drizzle it over the peppers.

Mix and continue to cook for another 30 minutes with a lid on, stirring and returning the chicken pieces to the peppers.

Cover and cook, basting the chicken occasionally as liquids accumulate. Continue cooking over low heat for about two hours, or until most of the liquid has evaporated and the peppers are tender and caramelized. Towards the end of cooking, taste and adjust the seasoning if necessary.

If there is too much liquid, cook half-covered to reduce it (the amount of liquid depends on the peppers, sometimes they are very juicy and release a lot of liquid, sometimes less).

The dish is ready when the sauce has reduced and thickened. Remove the lid and place the dish under the oven grill for light caramelization.
