During Passover, we miss crêpes, that's a fact! This delicious recipe lets you rediscover the pleasure of these little French delights, adapted to the constraints of the holiday. With their simple and permissible ingredients, they'll delight the whole family. Easy-to-prepare batter, quick cooking: that's the secret to success!

Ingredients
- 3 eggs
- 1 tablespoon of sugar
- 1/2 packet of Passover baking powder
- 1 sachet of vanilla sugar
- 250g of cornstarch
- 1 tablespoon of Matza flour
- 1/2 liter of milk
- 1 drizzle of oil
- Butter (for cooking)
- Nutella and jam (for the topping)
Preparation steps
- Pour all the dry ingredients into a bowl: sugar, Passover baking powder, vanilla sugar, cornflour and matzah flour.
- Make a well in the center and crack the eggs into it.
- Using an electric mixer, gently beat starting with the eggs, then gradually pour in the milk until you obtain a smooth batter that is neither too thick nor too runny.
- Let the dough rest for 30 minutes at room temperature.
- Melt a little butter in a crepe pan over medium heat.
- Pour a ladleful of batter and spread it gently to form a thin pancake. Cook until golden brown, then flip to cook the other side.
- Repeat the process until all the dough is used up.
- Top your hot crepes as you like: Nutella, jam, or both!
For even fluffier crepes, you can add a drizzle of oil to your batter before cooking. Store your cooked crepes in a clean tea towel to keep them soft until you're ready to eat them.
