Ingredients
- 3 medium-sized cucumbers
- 2 large tomatoes
- 1 green or red bell pepper
- Olive oil
- Fresh lemon juice (at least 1 lemon)
- Salt to taste
- Pepper (optional)
- Za'atar (optional)
- 2 tablespoons of chopped fresh parsley (flat leaf)
- 2 tablespoons of chopped fresh mint
- ½ carrot, peeled and cut into small dice
- ¼ red onion, finely diced, or 2 green onions, finely diced
- 2 leaves of romaine lettuce, chopped
- Toasted pita chips for garnish
- 1/4 cup toasted pine nuts (optional)
- ¼ cup crumbled feta or goat cheese (optional)
Preparation steps
- Take all the vegetables out to room temperature a few minutes before starting.
- Finely chop the cucumbers, tomatoes, and bell pepper (you can peel them or not, depending on your preference). Stir in the diced carrot, red onion, fresh mint and parsley, as well as the chopped romaine lettuce.
- Pour all these vegetables into a large bowl.
- Just before serving, generously drizzle olive oil over the salad, then squeeze fresh lemon juice over it. Season with salt, pepper if desired, and sprinkle with za'atar.
- Mix well and serve immediately.
- Top with toasted pita chips, toasted pine nuts and crumbled feta or goat cheese.
