Ingredients:
A package of fish. (Whatever you like, Dennis, Bury, Tilapia, etc.).
I used fresh tilapia.
10 whole cloves of garlic
2 white onions cut into strips.
2 packs of small, colorful peppers.
5 tomatoes
A teaspoon of sugar
1 sprig of fresh rosemary. .
4 stalks of celery leaves including the leaves.
1 tablespoon of sweet paprika.
Half a chili pepper (only if you like it spicy).
Coarse salt, ground black pepper.
A little flour for cooking the fish
Preparation:
Sauté the onions, bell peppers, garlic, and celery stalks (including the leaves) in four tablespoons of olive oil. Add coarse salt, ground black pepper, and the rosemary sprig. Cover the pan and stir occasionally. Add sliced tomatoes and a teaspoon of sugar, and cook until the vegetables soften (but not completely!). Finally, add a tablespoon of sweet paprika and continue to fry over low heat for one minute.
Take a saucepan, add a little olive oil and place the floured fish, skin-side down, in the pan. Cover the pan and sprinkle the fish with coarse salt and ground black pepper. Fry on each side for 10 minutes.
After 20 minutes, transfer the fish and place it on the peppers over high heat and with the lid closed, continue to fry for another 2 minutes, turning off the gas.
You can make couscous and/or mashed potatoes.
