Chocolate marble cake for Passover

Looking for a festive and indulgent dessert that respects Passover rules? This chocolate marble cake is the perfect answer. Easy to prepare, it plays with the contrasts between a light vanilla batter and rich chocolate veins. The secret? A good technique for whipping the egg whites and a beautiful marbling for a spectacular visual effect!

Practical information
Preparation time: 20 minutes
Cooking time: 40 to 45 minutes

Estimated average price: approximately 35 ₪ for the recipe

Ingredients

  • 180 g of sugar
  • 160 g of potato starch
  • 6 eggs
  • 1 sachet of vanilla sugar
  • 1 knob of butter for the mold (optional if using a silicone mold)
  • 3 tablespoons of cocoa powder (like Nesquik)
  • 50g of almond flour

Preparation steps

  1. Preheat your oven to 180°C (350°F). Crack the eggs, carefully separating the whites from the yolks. Whisk the yolks with the sugar until the mixture turns pale. Incorporate the vanilla sugar, then the almond flour and cornstarch using an electric mixer.
  2. Whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the previous mixture, using a spatula to lift and fold the batter to maintain its volume. Then divide the batter into two equal portions.
  3. Pour the cocoa powder into half of the batter and mix well. Alternately pour the white and chocolate batters into the pan, creating a two-tiered checkerboard effect. Create pretty marbled patterns by running a knife vertically through the two layers of batter.
  4. Bake for 40 to 45 minutes. Check for doneness by inserting a knife into the center of the cake; it should come out clean. Let cool completely before unmolding.

For a truly successful marbling effect, don't hesitate to make several passes with the knife in both directions to create harmonious patterns. You can also store this cake for 2 to 3 days in an airtight container—it will only get more moist!
