Lemon tart, the best in the world!

A decadent tart made with homemade shortcrust pastry, a smooth lemon cream and a delicious lightly golden meringue.

Preparing the shortcrust pastry

Ingredients

  • 500 g of flour
  • 2 eggs and 1 egg yolk
  • 2 teaspoons of baking powder
  • 125 g of sugar
  • 1 sachet of vanilla sugar
  • 250g of softened margarine
  • 1 tablespoon of oil
  • 1 pinch of salt

Preparation

In the bowl of a food processor fitted with the dough hook, mix all the ingredients in the order indicated.

When you obtain a homogeneous shortcrust pastry, add a little water if it seems too stiff.

Roll out the dough to a maximum thickness of 0.5 cm. Place it in a tart tin lined with parchment paper, taking care to press it well up the sides.

Bake the dough in the oven at 180°C for 15 to 20 minutes, depending on your oven.

With this amount of dough, you can make at least three pies. Freeze any leftovers to use in future recipes: a great way to save time!

Preparing lemon cream

Ingredients

  • 3 egg yolks
  • 100 g of sugar
  • The juice of 4 lemons
  • The zest of a lemon
  • 1 tablespoon of cornstarch
  • 1 large glass of water

Preparation

In a small saucepan, mix the egg yolks with the sugar, lemon zest and juice.

Dissolve the cornstarch in a large glass of water, then stir it into the mixture.

Heat gently while stirring until you obtain a cream with the consistency of a custard.

Allow to cool slightly, then pour the lemon cream over the already baked tart base.

Preparing the meringue

Ingredients

  • Egg whites
  • 180 g of sugar
  • A little lemon juice

Preparation

Beat the egg whites until stiff peaks form.

Gradually add the sugar, then pour in a little lemon juice while continuing to beat.

Using a piping bag fitted with a nozzle, arrange the meringue attractively on the tart.

Brown it under the oven grill at 240°C for one to two minutes maximum. Watch carefully: the meringue browns very quickly!

You can also replace the meringue with kiwi slices.
