Ingredients
- 75 g of matzo powder
- 6 eggs
- The juice of an orange
- 250 g of sugar
- Frying oil
- Salt
Preparation steps
- In a bowl, beat the eggs by hand until they become frothy.
- Gradually add the matzo powder, stirring well to avoid lumps.
- Pour in the fresh orange juice and a pinch of salt, then mix until you obtain a smooth and homogeneous paste.
- In a saucepan, mix 500 ml of water with 250 g of sugar and bring to a boil over medium heat.
- Let the syrup cook until it has reduced by half, which will give it a nice consistency.
- Heat the frying oil over medium-high heat in a pan.
- Using a tablespoon, form small balls of dough and gently drop them into the hot oil. Fry them until golden brown.
- Retrieve the fried spheres with a slotted spoon and immediately immerse them in the hot syrup.
- Let the spheres soak in the syrup for a few moments, then remove them to serve.
To ensure your spheres are nice and soft inside, dip them in the still-warm syrup as soon as they come out of the oil — that's the secret to their creaminess! You can enjoy them warm or cold, according to your preference.
