Ingredients
- 500 g of flour
- 2 eggs + 1 egg yolk
- 2 teaspoons of baking powder
- 125 g of sugar
- 1 sachet of vanilla sugar
- 250g of softened margarine
- 1 tablespoon of oil
- A pinch of salt
- 500g of mascarpone
- 500 g of fresh cream 38 %
- 2 tablespoons of icing sugar
- 4 tablespoons of vanilla pudding
- Chocolate or decoration of your choice
Preparation steps
- Pour all the ingredients for the shortcrust pastry into the bowl of your food processor: flour, eggs, egg yolk, baking powder, sugar, vanilla sugar, softened margarine, oil and salt.
- Mix with the dough hook until you obtain a smooth shortcrust pastry. If the texture is too stiff, add a little water.
- Divide the dough into two equal parts and form two identical circles, making a hole in the center of each.
- Bake the two discs in a preheated oven at 180°C, one after the other, for 15 to 20 minutes until golden brown (the time may vary depending on your oven).
- Let the shortbread cookies cool.
- Prepare the mascarpone cream: whisk together the mascarpone, fresh cream 38 %, icing sugar and vanilla pudding until you obtain a thick and smooth cream.
- Using a piping bag, pipe even mounds of cream onto the first cooled shortbread disc.
- Carefully place the second disc on top, then repeat the process with the remaining cream.
- Decorate as you wish: chocolate, fruit, or any other gourmet decoration that pleases you.
This cake is quick to prepare but offers a very elegant result! Keep it in the refrigerator until serving time so that the cream remains firm and smooth.
