Want to surprise your family with an elegant yet affordable homemade pastry? These mini Swiss rolls are the perfect way to bring everyone together around the table. Between the soft, leavened dough and the rich pastry cream, enhanced with chocolate chips or raisins, each bite becomes a true moment of pleasure. And for the children, simply transform the dough into chocolate croissants: everyone will be delighted!

Ingredients
- 1 kg of sifted flour
- 400g of butter or margarine
- 6 egg yolks
- 190 g of sugar
- A small pinch of salt
- Two cubes of yeast or 30g of dried yeast
- 400 ml of milk at room temperature (or soy milk)
- 1 liter of milk (or soy milk)
- 10 egg yolks
- 180 g of sugar
- 75g of cornstarch
- Vanilla extract
- 200g of chocolate chips or raisins
Preparation steps
- Pour the sifted flour, sugar, salt, and margarine into your bowl. Knead this mixture with the dough hook until you obtain a smooth texture.
- Next, incorporate the yeast, the 6 egg yolks, and the milk. Knead for a few more minutes until you obtain a smooth and supple dough.
- Let the dough rest for 45 minutes in a warm place.
- Meanwhile, prepare the pastry cream: boil 1 liter of milk.
- In a bowl, whisk together by hand the 10 egg yolks with 180g of sugar, cornflour and vanilla extract until you obtain a smooth mixture.
- Slowly pour the hot milk over the mixture, stirring constantly to prevent lumps from forming.
- Pour the cream into a saucepan and place it over low heat, stirring regularly until it thickens.
- Stir in the chocolate chips or soaked raisins into the cooled pastry cream.
- Spread the risen dough on a work surface. Spread the pastry cream over it, then roll it up gently.
- Cut into 2 cm thick slices and arrange them in a buttered dish or in mini molds.
- Bake at 180°C for approximately 15 minutes until golden brown.
- For the chocolate croissant version (intended for children), simply cut strips of dough, place a chocolate bar in the center, roll them up, brush them lightly and let them rise before baking them under the same conditions.
These pastries are best enjoyed the same day, while still warm. You can also prepare the dough the day before and let it rise in the refrigerator: this will give your mini Swiss rolls even more flavor and aroma.
